Christmas Pudding

Serves 8
8 hrs cook time

Ingredients

150g raisins
150g sultanas
100g Atora Original Suet
100g McDougalls or Be-Ro Self-Raising Flour
100g fresh breadcrumbs
75g dark brown sugar
50g peel, chopped
50g almonds, chopped
1/2 tsp mixed spice
1/4 tsp salt
1 small apple, peeled, cored and chopped
2 eggs, size 4
75ml milk
50ml brandy, sherry or extra milk

Method

Step one
Mix all dry ingredients and apple together. Beat eggs, milk and brandy together and stir into dry ingredients. Mix well.

Step two
Spoon into a well-greased 2 pint (1 litre) basin, cover with lightly oiled greaseproof paper and kitchen foil. Steam for 8 hours.

Step three
Replace covering with fresh greaseproof and store in a cool dry place until required. To re-heat, allow 3 hours steaming.

Cook’s Tip
Christmas puddings store well, so make an extra one for eating later in the year. Spoon some brandy over the top on the pudding every 3-4 months to keep it moist.
