Plum Dumplings

Serves 4
12-15 mins cook time

Ingredients

75g Atora Original Suet or Atora Vegetable Suet
175g McDougalls or Be-Ro Self-Raising Flour, sifted
75g caster sugar
1 tbsp poppy seeds
2 tbsp lemon, grated rind and juice
a little cold milk, to mix
firm ripe plums, stoned carefully
whole almonds, shelled
a little melted butter
Decoration:
sprig of mint or dill, if liked

Method

Step one
In a mixing bowl, mix together the flour, Atora Suet, sugar, poppy seeds, lemon rind and ground almonds.

Step two
Add enough cold milk to make a firm dough. Divide the dough into 8 pieces.

Step three
Roll out each piece of dough large enough to wrap around the plum. Insert a whole almond into each plum and close back together.

Step four
Wrap the dough around the plum and seal the edge with a little water to form a neat parcel.

Step five
Drop the dumpling into a little simmering water flavoured with the juice of the lemon. Cook for 12-15 minutes. Remove from the cooking liquid with a slotted spoon.

Step six
Once cooked drain well then brush with the butter. Serve with a sprig of mint or dill.

Cook’s Tip
For a speedy sauce (as illustrated), heat 90 ml (6 tbsp) ready made lemon curd and spoon around dumplings on serving plate.
